Vegan Cauliflower Wings

An appetizer that will forever be on the top of my list is cauliflower wings. I’ll be the first to let you know that they will never replace a great, thoroughly cooked chicken wing. These are great for those looking to try a meatless option or for those like me who just enjoy these bite-size breaded nuggets of cauliflower. After researching (and trying them at different restaurants) I know that many recipes change from the air fryer, fried in oil or baked in the oven. I decided to show you all how to do all three with the same recipe. Hope you enjoy!

 

Looking for a softer veggie inside of your cauliflower wings? Place in boiling water for 3 to 5 minutes before starting the steps below. *This step is not necessary.

Ingredients

  • 1 head of cauliflower
  • 1 cup of flour (Just all-purpose, you can also use gluten-free options)
  • 1 tbsp of cornstarch
  • 1  tsp of paprika
  • 1 tsp of garlic powder
  • 1/2 to 1 cup of water or milk (this will determine how thick your batter is. start with 1/2 cup and if you will like it runnier, add more liquid.)
  • 1 tsp of cumin (optional if not on hand)
  • Salt and pepper to taste (start with a teaspoon each)
  • Oil, for frying

Instructions

  1. Mix all of the dry ingredients together, this includes flour and seasonings. Use a whisk to make sure everything has been incorporated. 
  2. Add liquid (milk or water) to the mix starting with 1/2 cups. For the baked option, I went with a thinner coating and added close to a full cup of water. For the fried option I went with a thicker coating and added close to 3/4 cup of water.
  3. Dip the cauliflower in the wet batter (I like to do this one by one or in batches to make sure each piece is heavily coated). Be sure to shake off any excess batter before cooking.
Baking (Bottom, Left Picture): Bake at 400 to 425 degrees for 10 to 15 minutes while flipping each side every few minutes. You want each piece to be golden brown.
 
Frying (Bottom, Right Picture) Lower “wings” into hot oil (I usually use canola or vegetable) and cook evenly on all sides for 4 to 5 minutes until golden brown. Drain and transfer to a plate once done frying.
 

Air Fryer: Coat air fryer with non-stick spray or oil and cook “wings” in a single layer on 350 degrees for 15 minutes.

 

Three Ingredient Buffalo Wing Sauce:

1 cup of butter, unsalted or buttery sticks if vegan

2 tsp of granulated garlic

1 1/2 cups of hot sauce

Melt Butter in a medium pan over medium heat. Turn to a low simmer.

Whisk in garlic and hot sauce until the sauce is cohesive. Toss wings and serve!
